Thekua Cookies are my version of making a baked version of Bihari Thekuas. Thekuas are originally wheat based fried Indian biscuits made mostly in region of Bihar during Chatt Puja. These Thekuas taste amazing because of the combination of fennel and cardamom. Mostly Thekuas are light on sweetness and are relished as a part of breakfast or evening evening snacks.
These Thekuas are enjoyed with pickles and if I remember clearly I have had these with mango pickle for the longest time ever. So while the Thekua cookies taste great, you can enjoy them with a cup of tea too. Mostly these Thekuas as packed even for journeys and are send to families members as prasad too. Oh! the lovely , dark brown Thekuas are one Bihari delicacy I love a lot. So when I was baking the other day, go tempted to make my version of baked Thekuas or the cookie version.
The good thing about these Thekua cookies are that they have no baking soda or baking powder so you can keep this completely clean. I would love to have these Thekua cookies again and again, what about you?

Thekua Cookies
A simple, baked version of Bihari Thekua are these healthy version Thekua Cookies
Ingredients
- 1 cup Whole Wheat Flour
- 1/4 cup Ghee
- 1/2 cup Jaggery
- 2 tbsp Fennel Seeds
- 1 tbsp Cardamom Powder
- 1/4 tsp Salt
Instructions
Take a bowl and add ghee and mix jaggery and beat till it turns creamy.
Make a powder of fennel seeds along with cardamom and mix in this ghee and jaggery mix.
Gradually add a little salt and add whole wheat flour in the ghee mix.
Use little water to make dough but do not knead the dough.
Pre heat the oven at 180 degrees and meanwhile grease the tray and roll the dough and cut into small circular cookies and bake it at 180 degrees for 15 mins.
Now let it sit down in the over first for 5 mins and then take it out and cool them completely.
Store it in air tight container.
