Suran Ki Sabji, is a must have for our family during Diwali. It’s a ritual which we follow back at House of Uttar Pradesh to eat this on the day of Diwali. I remember as a kid since I wasn’t very fond of eating this Yam or Suran, my grandmother would tell us stories of why we should eat it. The funniest then was that one would be re-born as a mouse if you do not eat it. Ha ha imagine , how as a kid we were influenced via stories. I clearly remember eating Suran ki Sabji for years on Diwali, just to avoid mishaps in my next life.
My mom made various versions of Suran and as I grew older , I kind of started liking it. But my Mother -in- Law make Suran Chokha, which turned out great too. I would however share that in a separate post. For now let me tell you Suran is very fibrous like most of the root vegetables and offers good nutrition for a healthy diet. Making Suran ki Sabji is easy as all you have to do is boil it and then saute it with little oil and then cook in masala. Authentic recipe demands deep frying but this too works really well for the taste.

Suran ki Sabji
Suran ki Sabji is a desi way of making Yam Masala. A super yum and easy recipe.
Ingredients
- 250 gms Yam
- 1 Onion (Chopped)
- 1 Tomato (Chopped)
- 1 tsp Ginger Paste
- 1 tsp Garlic Paste
- 1 Green Chilly
- 5 Pepper Corns
- 2 Cloves
- 1 Bay Leaf
- 1 tsp Cumin Seeds
- 1 tbsp Oil
- 1 tsp Turmeric Powder
- 1 tsp Coriander Powder
- 1 tsp Kitchen King Masala
- 1 tsp Cumin Powder
- 1/4 tsp Red Chilli Powder
- 1/2 tsp Hing
- 1 tbsp Coriander
- 2 tbsp Curd
- 1 tsp Salt
Instructions
Cut yam or suran into small pieces and add in boiling water and cook till they are tender but not mushy. Make paste of tomatoes and keep aside.
Now heat a little oil and pan fry these till they are light golden.
Now take a wok and heat oil and add hing and cumin seeds and let it crackle.
Add onions and caramelize them and add ginger , garlic and green chilles.
Once the raw smell goes add tomato paste and cook with turmeric, coriander powder, red chilli powder and cumin powder, till it leaves the oil. Now gradually mix salt in curd and mix in masala and keep mixing so it doesn't curdle.
Now add the sautéed yam pieces and mix well into the masala.
Add 1/4 cup water and cook covered . After 10 mins add kitchen king masala and coriander leaves and serve hot. You can add a little lemon juice also if you want.
