Purple Fried Rice was inspired from my evening walk when I saw some purple wild leaves growing between green grass. I so loved the combination that couldn’t stop myself trying it for my recipe. This purple fried rice is fairly simple, made just like regular fried rice but tastes and looks even more beautiful.
I always believe that food should look beautiful before someone tastes it. That adds to ones appetite and of course make the whole thing more tasty. So while I was trying the recipe, I made sure not to over cook cabbage and still retain the crunch. This cabbage does seep out some color to the rice and thus makes it light purple and adding more beauty to it too. I used corns and red bell peppers again giving more bite to this very beautiful looking Fried Rice.
Go ahead try this today and treat your family with this. I bet even those who haven’t had purple cabbage before will love eating it more often. Though this is my first purple cabbage recipe, stay tuned for more.

Purple Fried Rice
Ingredients
- 3 cups Steamed Rice
- 1 cup Spring Onions
- 1 cup Boiled Corns
- 1 Red Bell Pepper
- 2 cups Chopped Purple Cabbage
- 10 cloves Chopped Garlic
- 1 tbsp Oil
- 1 tbsp Salt
- 1/2 tsp Black Pepper
- 1 tsp Oregano
- 1 tsp Dried Ginger Powder
- 1 tsp Chilli Flakes
- 1/2 tsp Dried Basil
- 1/2 cup Paneer Cubes
Instructions
Heat oil and add chopped garlic and 1/2 cup of spring onions.
After two mins add boiled corn, bell pepper and purple cabbage and sauté well.
Add salt, oregano, dried ginger powder, basil, black pepper and chilli flakes and mix well.
Now add the cooked rice and mix well and top up with rest of the spring onions.
