Nutty Jowar & Rajgira Cookies turned out simply good. Well I did use Whole wheat flour , so won’t put it under gluten free still. But I am sure this can be done without whole wheat too. I am soon going to try that gluten free version.

Cookies at my place are quite common. My son just loves snacking on them. That also means I need to be very sure what all goes inside it and how can the portions still be controlled. So that’s the reason I kept the sweet content lesser and these Nutty Jowar & Rajgira Cookies are just sweet enough for you to enjoy the taste. So I would suggest to maintain that sweetness but you can always change too.

Another important part of this cookie making is the way you mix the ghee and jaggery and then add the other dry mix to complete the dough. Avoid kneading but use hands or spatula to combine it well. If you have extra dough of this Nutty Jowar & Rajgira Cookies left, keep it in fridge and use it the next day.

I generally take it out and let it come back to room temperature and then make the cookies. So this proportion will give around 20 pieces and I generally do it in two batches.These Nutty Jowar & Rajgira Cookies are really rich in fibre, protein, calcium and good fat. Something we all can enjoy but remember not to over do 🙂

Also in this recipe I have used a special sugar. Why special ? Because for the first time I experimented with Coconut Sugar. I always wondered about its taste but had heard so much about its goodness. So when I got this lovely pack of surprise from Trihaa Natural Foods, I for sure wanted to try it out in my cookies. Nutty Jowar & Rajgira Cookies

Ingredients

  • 1/2 cup Jowar Flour
  • 1/2 cup Whole Wheat Flour
  • 1/2 cup Rajgira Puffs ( or Flour)
  • 1/2 cup Ghee
  • 3/4 cup Coconut Sugar
  • 1/2 tsp Vanilla Essence
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 10 Almonds
  • 10 Cashew
  • 2 tbsp Dessicated Coconut
  • 2 tbsp Flax Seeds Powder
  • 1/4 cup Milk

Instructions

  1. Take a deep bowl and mix Ghee and Jaggery, Vanilla essence with 1 tbsp of milk and beat it till its kind of whitish in color.

  2. Now put the oven on preheat mode at 180 degrees Celsius for 10 mins.

  3. Next in a grinder add almonds, cashew, flax seeds, dessicated coconut and make a powder.

  4. Again add rajgira puffs and blend it together.

  5. In the end add Jowar and Whole wheat flour with baking soda , salt and give it a final mix.

  6. Now gradually start mixing this mixture in the ghee and jaggery bowl with help of a spatula.

  7. Keep mixing and if it gets very dry add some milk to it and then make a soft dough. You might have to use your hands to bring all of it together.

  8. Now bring a baking tray and grease it and keep aside.

  9. Take small part of dough and roll it with a rolling pin and then when it 2 cms thick us a cookie cutter to cut your desired shapes.

  10. Place them on the baking tray with some distance (around 1 inch) in between.

  11. If you are using an OTG bake this for 15 mins at 180 degrees itself directly and if a convection oven then bake for 10 mins at 180 degrees and then take out the tray and flip over the cookies very gently and bake for another 5 mins. Let it sit in oven for 10 mins more before you take out the tray and let the cookies cool down and become crispy.

  12. Enjoy these Nutty Jowar & Rajgira Cookies in evening or anytime when you are looking for healthy sweetness.
