I have a school going kid and I am offcourse a typical Indian mom, who makes sure to check the tiffin box once he is back. But here is a something I want to share. In my mind I always thought that somewhere since my son misses the full lunch of Dal, Rice, Vegetable and Chapati, how do I compensate for that. Specially dal, since it protein and like other macro nutrients important for a growing body.
Then I tried this recipe very recently and just wondered that what kept me away for so long considering he has been in school for quite some time now. Anyways this dal powder is absolutely worth trying and not just in this spread, but in raitas , roti dough, add on in vegetables without much of fuss. You can store this for some 10 days in fridge too and though the recipe is of Moong dal, it can be done with any kind of pulses.
Ingredients
- 2 tbsp Yellow Moong Dal
- 1/4 tsp Olive Oil
- 1 stick Cinnamon
- 1/2 tsp Pepper Corns
- 1 tsp Flax Seeds
- 2 tbsp Hung Curd
- 1 Green Chilli
- 2 tsp Garlic
- 1 tsp Lemon Juice
- 1/2 cup Chopped Bell peppers
- 1/2 tsp Oregano
- 1 tsp Salt
Instructions
Boil 2 cups water with 1 tsp salt and par boil the soaked dal for some 10 mins.
Now heat little oil and roast the dal with chat masala, cinnamon stick and black pepper corns till its dry.
Let this cool for 20 mins and then make a fine powder of it in mixer and keep it on air tight container.
Next take hung curd with green chilli , 1 tsp garlic , oregano and 2 tbsp of this dal powder and make a fine paste.
Adjust seasonings and your dal spread is ready.
Now saute 1 tsp of garlic in 1/4 tsp of olive oil and saute bell peppers too with oregano and salt for just a min.
Now spread the dal spread on the slice and place the bell pepper mixture.
You can either put green chutney/cheese spread on the other slice or even the dal spread and close the sandwich.
Toast it on a pan and serve hot.
