Here I bring you a very simple recipe of Egg Spread and I will also tell you how I got inspired to try this out. So firstly I love deviled eggs and secondly my son hates boiled eggs, specially because the yolk would get too dry by the time he would hit the breakfast table.

That's when I thought to try out it my own way and if turned out that not only he loved it , I too fell in love with this recipe. So now even though I can eat full egg without fuss, I still save the yolk for trying out this spread. And its interesting how you can add little chesee and give it cheesy flavor to appeal to you kids as well. Now nutritionally yolks are rich in B 12 , Vitamin A , D, E and K too. Infact flax seeds add additional Omega 3 to the recipe since yolks itself have it in them. So overall a good recipe to try out for kids and offcourse self.

Ingredients

  • 1 Boiled Egg
  • 1 tsp Coriander Chopped
  • 1 1/2 tbsp Fresh Hung Curd
  • 1 tsp Garlic
  • 1 Green Chilli Chopped
  • 1 tsp Flax seeds powder
  • 1/2 tsp Chat Masala
  • 1/4 tsp Black pepper
  • 1/4 tsp Oregano
  • 1 tsp Lemon juice
  • 1 tsp Cheese spread

Instructions

  1. Seperate the egg yolks in a bowl.

  2. Now in a mixer add hung curd, garlic, black pepper, oregano and cheese spread (optional) and make a thick paste of it.

  3. Now you can either add the egg yolks in the mixer and make a paste or mash the yolks and add the curd mixture.

  4. Once the mixture is evenly blended add little lemon juice , chat masala, coriander and green chilli.

  5. If its too think add little hung curd to make it of spread consistency.

  6. Feel free to adjust the seasonings as per your taste.

  7. Now this spread can be used on toast, in sandwiches, roti or even filled back on the egg whites.

  8. Alternately can be served with some baked vegetable chips too for evening snacks.
