Carrot Raita

I made carrot raita first time when I had some guests at my place and they just loved this carrot raita.So I was short of time and still wanted to make something interesting and that's when I saw some carrots in the fridge and thought of making carrot raita. Infact carrot raita turned out to be very refreshing and offcourse got a good change of taste too.

Though I boiled the carrot before adding, but if you like the crunchy piece you can use raw carrots too for carrot raita. Additional flavour was the tempering which just enhanced the taste of carrot raita.

Ingredients
  1. Carrot: 1 grated and par boiled
  2. Yoghurt: 1 cups
  3. Green Chilli:1 chopped
  4. Milk: 2 tbsp
  5. Oil: 1/2 tsp
  6. Curry leaves:5
  7. Mustard seeds: 1/2 tsp
  8. Black salt: as per taste
  9. Red pepper: 1/2 tsp
  10. Cumin powder: 1/2tsp
Instructions
  1. Add red pepper, black salt, cumin powder in yoghurt and mix it till it is smooth.
  2. Not add carrot and chillies in the yoghurt and milk to give it a good consistency.
  3. Heat oil and add curry leaves and mustard seeds and put the tempering on the raita and serve.
