Tomato Corn Soup

Tomato Corn Soup is one my favorite for a winter night. Infact I had first time tried Tomato Corn Soup accidentally and then I loved it so much that it became a regular at my place. My son loves corn and husband is tomato soup fan. So for me Tomato Corn Soup is an easy mix of both the choices. Infact the combination of tomato and corn together .

Tomato Corn Soup is infact a yummy meal too as the corn makes it heavy enough . Also tomato gives the tanginess and corn makes it sweet so both together makes Tomato Corn Soup awesome.

So when you are looking for a good comfort food this Tomato Corn Soup can be a good rescue.

Ingredients
  1. Corn: 1 cup boiled
  2. Garlic: 5 roasted in microwave
  3. Tomato: 1 blanched
  4. Onions: 1 chopped
  5. Black pepper: 1/2 tsp
  6. Red pepper: 1/4tsp
  7. Sugar: 1/4 tsp
  8. Veg Stock: 1 cup
  9. Salt: as per taste
  10. Oil: 1/2 tsp
  11. Dried Parsley: 1/4 tsp
Instructions
  1. Make a paste of boiled corn with roasted garlic keep it aside.
  2. Heat oil in a wok and add chopped blanched tomatoes and cook till they are tender.
  3. Add sugar and cook for another two mins.
  4. Now add corn and garlic paste and cook for 2-3 mins before adding salt, cumin and red pepper.
  5. Add vegetable stock and bring it to boil.
  6. Sieve it and then boil the soup again before serving it with garnish of parsley and coriander.
