Coconut and Moong Dal Bites

Coconut and Moong Dal Bites is my extension of Moong Dal Cookies. I find them easy and also another way to make sweets healthier for kids. Secondly this requires no baking, so people without oven can still go ahead and use yellow moong dal for kids. If you ask me this requires even less ghee than the cookies so,  I would definitely prefer this.

Why only kids , you can make these for your friends too and we bet they would love it. Adding coconut is one option but the combination just works perfectly find. So I would suggest you not to skip it, unless you don’t like taste of it. Nuts , coconut , jaggery and cardamom with moong dal take the taste to a next level and you would almost feel like eating a rich moong mithai. These yummy little Coconut and Moong Dal Bites are cut into small portions so even kids do not over indulge but learn to eat in small portions.

I would go ahead and say, you can also make this for festivals and won’t regret too. It’s hardly any work and if you still want to cut the work, roast and powder the moong dal and keep in refrigerator. Use it when you need.

Ingredients

  • 1/4 cup Moong Dal
  • 1/4 cup Jaggery powder
  • 1/4 cup Desiccated coconut
  • 4 Almonds
  • 2 Cashew
  • 4 Cardamom
  • 4 Pistachios
  • 2 tbsp Ghee
  • 1 tbsp Chia Seeds
  • 1 tbsp Sesame Seeds

Instructions

  1. Soak moong dal for 1 hour , strain and then dry it.

  2. Heat 1 tbsp of ghee and roast moong dal till its light brown and then powder it.

  3. Also powder almonds , cashew, pistachios and cardamon. Keep 1 almond for garnish.

  4. Now in a pan add jaggery powder, 1 tbsp of ghee and 2 tbsp of water and let jaggery melt.

  5. Once its all melted add moong dal powder, coconut powder, and nuts and mix well as it turns into sticky mixture.

  6. Now take this sticky mixture on a parchment paper and press with hand to flatten it.

  7. Cut into small bites and then cover and keep into refrigerator so jaggery hardens and in turn giving shapes to the bites.

  8. Let kids snack on them and enjoy a good protein and iron rich snack.
