If you love Italian there is no way you wouldn’t have tried Risotto once. However if you haven’t then remember it’s a type of a Italian way of fixing rice. Rice used in Risotto is a starchy variety and different than the rice we use.
While the recipe calls for authentic rice and its easily available on Amazon, if you want you can substitute it with any other rice too. However the outcome will be way different. Adding mushroom only makes this creamier. However a typical Risotto or Mushroom Risotto is cooked with wine, but we have used vegetable stock and lemon. So this still might have a little difference than the regular Risotto , however you would still love it.
Once I got this special Arborio rice there was no looking behind. I loved trying my own way of fixing Mushroom Risotto and enjoy with some fresh lime water 🙂

Mushroom Risotto
Ingredients
- 1 cup Arborio Rice
- 4 cups Vegetable Stock
- 3 tbsp Parmesan Cheese
- 1 tbsp Chopped Garlic
- 1 Sliced Onion
- 2 tbsp Fresh Basil Chopped
- 1 tsp Black Pepper
- 1/2 tsp Salt
- 1/2 tsp Oregano Seasoning
- 1 tbsp Lemon Juice
- 1 tbsp Olive Oil
- 1 tsp Butter
- 1 cup Sliced Mushroom
Instructions
In a pan heat butter and add rice and saute it on slow flame and keep aside.
Seperately in another pan heat olive oil and saute onions and garlic and then add sliced mushrooms and little salt, pepper , oregano and chilli flakes.
Now mix the rice and sauté for a while and gradually add stock 1/2 cup and cook and then again 1/2 cup and so on till the rice is nicely done.
Once done, add basil leaves , lemon juice and parmesan cheese , mix and serve hot.
