Carrot Halwa Cake is a classic fusion touch of combining Carrot Halwa with Whole wheat cake. This cake gives a rich flavour and is as simple as it sounds. Every bite has that flavour to make you sit down and enjoy it alone. A type of cake you want to save for a winter morning breakfast time. Making it with whole wheat though makes you work a little more on baking time, but it does have its own magical taste. Once you develop taste for healthy food, you would start falling in love with it.

Coming to the recipe, uust mix Carrot Halwa in the cake batter and bake. It comes out super moist and delicious without asking. Gajar Halwa itself is mostly loved by people so having that in cake is another plus one. I did add a layer of homemade cream sauce glaze with some almonds on top, to increase the moistness. The good part of this cake is its controlled sweetness. Now since Halwa anyways mostly has sugar the sweetner here is dates powder which balances the whole equation nicely.

While serving you can also top it up with some Gajart Halwa garnish , but I love it just like that. This Cake is a complete dessert and will only make you crave for another piece, so beware!

I had some Halwa already at home , so I used the same in this recipe too. However if you don’t have just use some fresh carrot and cook with little ghee, sugar and cardamon and add it. You would still love this recipe too.

While you make changes , don’t forget to add little more oil and in the original recipe the halwa does come with its share of ghee and sugar. Now lets get going with the recipe here without drooling more and hope you enjoy making this as much as I did.

Ingredients

  • 1 cup Wholewheat Flour
  • 3/4 cup Carrot Halwa
  • 1/4 cup Oil
  • 1/4 cup Dates Powder or Jaggery
  • 1 cup Milk
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 2 tbsp Cream
  • 2 tsp Sliced Almonds
  • 1 tsp Cardamom Powder

Instructions

  1. Add baking powder, baking soda, salt in wholewheat flour and sift it 4 to 5 times.

  2. Take a deep bowl add oil, dates powder and 1/2 cup carrot halwa with cardamom powder and 1/2 cup milk and use a beater or hand blender to mix it.

  3. Now oil the baking tin and also put the oven in preheat mode.

  4. Gradually mix the dry flour in the wet mix and keep folding it. If it is gets too dry add more milk.

  5. Add some more halwa at the end and mix the batter in cut and fold method.

  6. Now pour the batter in the tin and bake for 30 to 35 mins at 180 degrees.

  7. Prick a knife or tooth pick to check if its done from inside. Do not open the over door before time to check and also let the cake sit in oven for 10 mins and then take it out and let it cool completely before de-moulding.

  8. Now with 1 tbsp of milk heat the cream of malai and add little sugar/condensed milk and spread over the cake and then sprinkle the almonds on the top.

  9. Cut and serve every piece of healthy yet heavenly happiness.
