Peas and Oats Casserole is a great way of making lunch in minutes with all the goodness of seasonal and fresh green peas and oats. I generally try to eat one cereal with a meal and not mix many together for easy digestion. So when I thought of this recipe, Oats was the best choice to make a thick creamy sauce over peas. I have yet to try other grains too. But for now this recipe of Peas and Oats Casserole look a perfect fit.

This Peas and Oats Casserole has good flavour of garlic and crispy onions add another level of texture to this recipe. I like the taste of oregano but if you don’t feel free to use garam masala that too taste great.You can enjoy this Peas and Oats Casserole anytime of the day, I however had this for lunch. Fresh green peas are quite sweet and they make a great combination when baked with oats. If you are lactose intolerant, use almond milk or water to cook oats, Milk adds tho the creaminess overall.

This recipe of Peas and Oats Casserole can be used with mixed vegetables like french beans, carrot etc too and will taste equally good.Keep trying new things with kids and they would start liking it.

Ingredients

  • 3 tbsp Oats
  • 1 cup Peas
  • 1 Tomato
  • 1 tbsp Garlic
  • 1/2 Sliced Onion
  • 1 tsp Ginger
  • 1 Green Chilli
  • 1/4 cup Coriander
  • 1 tbsp Oil
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tbsp Lemon Juice
  • 1 tsp Cumin Powder
  • 1 tsp Oregano
  • 1 tsp Cumin seeds
  • 1/2 cup Milk
  • 1 tsp Flax seeds powder

Instructions

  1. Heat 1 tsp oil and saute 1 tsp ginger and garlic, green chilli ,

  2. Add oats with salt to taste , little pepper powder and saute for 30 secs before adding 1/2 cup milk and 1/4 cup water (if needed) to cook oats nicely.

  3. Add some oregano seasoning and keep it aside. You can add any italian seasoning or even garam masala for indian flavour.

  4. Take a pan and heat 1 tsp on oil and add come cumin seeds. 

  5. Next add some green chilli and chopped garlic and then green peas with salt and pepper to taste. Let this cook covered for 5 to 6 mins till peas are done.

  6. Next add some lemon juice and some oregano and put off the flame.

  7. Take a greased baking dish and first add a layer of peas and then cover it with cooked oats. Now top this up with diced tomatoes , sliced onions , flax seeds powder and some coriander.

  8. Preheat the oven at 180 degrees for 5 mins and then bake this at 180 degrees for 5 to 7 mins again.

  9. Serve it by cutting into pie like pieces and enjoy with some fresh juice.
