Zucchini and Sprouts Salad was another good try for lunch time. While people look for one pot meals, I feel Salads are my kind of One pot meals. Reason, they are quick, tasty and you can eat them in hurry. I of course ask my students at CookWithRD to make sure they are not always in hurry to finish meals. However sometime practicing becomes difficult for self too. 

For my lunch time is perfect for salads , they keep me full till 4pm which is my tea time and that too without sugar. So what I have realised from the salads is that if the dressing is done properly, salads are a hit.Also you won’t find much of Kale or Lettuce as I don;t like them myself. Well if you do, please ahead and add.

I mostly like adding different texture as well as taste combinations in my Salads and this Zucchini and Sprouts Salad was not different. You want to add more protein, feel free to add some chickpeas and this would taste even better. Like one of these, you might like too , Chickpea Pesto Salad.

While making dressing make sure you taste it to adjust the seasonings as per your own liking.

Zucchini and Sprouts Salad

Ingredients

  • 1 cup Zucchini Diced
  • 1/2 cup Moong Sprouts
  • 1 tbsp Chopped Garlic
  • 1 tbsp Olive Oil
  • 1 tsp Honey
  • 1 tsp Dried Basil
  • 1/4 tsp Black Pepper Powder
  • 1 tsp Apple Cider Vinegar
  • 1/2 tsp Lemon Juice
  • 1 tbsp Chopped Coriander Leaves
  • 1/4 tsp Salt
  • 1/4 tsp Chat Masala
  • 1 tsp Roasted Crushed Nuts
  • 1/4 cup Green Capsicum Diced

Instructions

  1. Make a dressing by add 1 tsp olive oil, honey, lemon juice, vinegar, basil, salt, coriander leaves and mix well. Keep this aside.

  2. Take a pan and add 1 tsp on olive oil and saute garlic and then add moong sprouts and with some salt lightly saute it for 30 secs. Use the same pan to lightly roast zucchini dices  and then  then capsicum dices too.

  3. Now take a serving bowl and mix sprouts, zucchini and capsicum and add the dressing and a little chat masala as per taste and toss it all together.

  4. Garnish it with toasted nuts and serve immediately.
