Banaras Ki Tamatar Chat as the name suggests is all about the streets of Banaras. You must be wondering while I mostly share healthy recipes, how come Banaras Ki Tamatar Chat? Now that’s what I owe to my roots. Banaras is where I belong and that’s what brings this Banaras Ki Tamatar Chat recipe here.

The city has lot to offer you when it comes to good food and flavours. However this Chat is a local speciality. I of course tried the healthier version but otherwise this chat is made in desi ghee with khoya added in too. 

Well, one of the days when I was missing my city and we had planned Chat Party at home for dinner, I thought to add my Banaras Ki Tamatar Chat too. My better half who is a non Banarasi fell in love with the taste too, imagine this is just my version..streets of Banaras will make you keep asking for more and more.

The chat is in three parts, the spicy base of tomato and potato , sweet tomato sauce and then crunchy namakpara. In this namakparaa are basically cracker deep fried in ghee. The base is again almost cooked in lots of ghee with Khoya added for more texture and creaminess. So overall every bite is a delight, but this recipe comes with little changes but awesome taste too. Ingredients

  • 6 Tomatoes (finely chopped)
  • 2 Potatoes (boiled)
  • 1 tbsp Ginger
  • 1 Green Chilli
  • 2 tbsp Jaggery Powder
  • 1 tbsp Cumin Seeds
  • 1 tsp Cumin Powder
  • 1 tsp Chat Masala
  • 1 tsp Black Pepper Powder
  • 1 tsp Red Chilli Powder
  • 1 tbsp Oil
  • 2 tbsp Chopped Coriander
  • 1 tbsp Chopped Ginger (for garnish)
  • 1 tbsp Salt
  • 1/4 cup Baked Namakpare (Crackers)
  • 1 Lemon

Instructions

  1. First for tamatar chutney , puree almost 3 tomatoes and then add in a pan and cook on a medium flame with pinch of salt , 1/4 tsp black pepper powder and 1 tbsp jaggery powder. You can adjust sweetness as per your taste. 

  2. Keep cooking till it reaches a thick consistency and is not very watery and then keep it aside.

  3. Now heat up some oil and add cumin seeds, green chilli and 1 tbsp ginger and saute for few seconds and then add around 3 chopped tomatoes and cook on medium flame.

  4. As tomatoes turn mushy add two medium sized mashed potatoes and mix it well.

  5. Add black pepper, chilli powder, salt, cumin powder and chat masala to this mix and keep mixing it well.

  6. Cook this mixture for around 10 mins till all tomatoes and potatoes are mixed uniformly. You can also use a little of tamatar chutney to add in this.

  7. Add 1/2 tbsp of jaggery and 1/2 lemon juice in the mixture so its spicy, tangy as well as sweet.

  8. Now take a serving bowl and first all the tomato and potato mixture and top it up with tamatar chutney, coriander leaves, some chopped ginger, chopped green chilli and then crushed namakpare to complete the entire preparation.
