Suji Banana and Raisins Cake is here to stay on my list now. Well if you see of lately, I have found a new love in baking. And have posted many baking recipes  too. While all were focused around healthy baking , making them tasty too was my concern. And in this process experimenting with flours is what I loved the most!

In this Suji Banana and Raisins Cake the fun was using banana and dates as the sweeters . Also avoiding lot of oil or butter too. So essentially banana and yoghurt gave that needed moisture and the tendency of Suji to swell up anyways helped it to sore higher. I can easily replace this for Sheera  at home. Trust me for this, that by the time my son was home, I had finished half of it. The small bites make them so tasty and somehow banana in the bakes has its own amazing flavour.

Suji Banana and Raisins Cake

Ingredients

  • 3/4 cup Roasted Suji
  • 2 Ripe Bananas
  • 4 tbsp Yoghurt
  • 2 tbsp Oil
  • 1/3 cup Dry Dates Powder
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/4 tsp Vanilla Essence
  • 1/4 tsp Cardamom Powder
  • 1/4 cup Raisins
  • 1/4 cup Milk

Instructions

  1. In a bowl mash bananas, add oil , yoghurt, dry dates powder , vanilla essence and whisk well. Keep this aside.

  2. In a seperate bowl mix suji, baking powder, baking soda and salt. Gently mix them all. Put the oven on preheat at this point.

  3. Now gradually start mixing the dry powder in the wet oil and banana mix. Keep combining in one direction.

  4. The strokes should be such that they fill in the air to the batter. However do not over combine it too. Add the raisins too and mix gently.

  5. Take a baking dish and put a baking sheet. This step would help in easily taking out the cake later on.

  6. Pour the batter and sprinkle cardamom powder on top.

  7. Bake this cake for 20 mins on 180 degrees. Do your knife test after 20 mins and if it shows done. let the cake rest in the oven till it cools down.

  8. De-mould and cut into cubes and serve with hot cup of milk or tea in evening.
