And here is the Creamy Pesto Paneer which was a hit at one of the recent get together I had. So basically its nothing but paneer mixed in pesto sauce and being a weight watcher, instead of using oil which generally is the base of authentic pesto, I use water.

Beauty of Pesto is the strong flavour of Basil it has and I am such a huge lover of basil. I can have it in all meals, so you can imagine my love for Pesto. However even if you haven’t had Pesto before, you would love this creamy flavour with Paneer. Wondering how does it get creamy? Well almonds remember?? Yes they along with water give a nice creaminess to this recipe and hence the name Creamy Pesto Paneer 🙂
If you are on a Protein rich diet, I would suggest to team it up with some sauted vegetables and enjoy. I can however have this Creamy Pesto Paneer just like that 🙂
Creamy Pesto Paneer
Ingredients
- 1/2 cup Basil Leaves
- 1/2 cup Almonds (soaked in water)
- 2 cloves Garlic
- 1/2 tsp Black Pepper
- 1 tbsp Olive Oil
- 1/2 tbsp Honey
- 1 tbsp Lemon Juice
- 100 gms Paneer (cut in small cubes)
- 1/2 tsp Chilli Flakes
- 2 tbsp Water
Instructions
Peel the almonds and add in a grinder along with basil leaves, black pepper, lemon juice, garlic and olive oil and make a coarse paste. You might need to add more oil or water to get a coarsely done pesto.
Next transfer the mixture in a bowl and mix the paneer cubes and keep aside for some 10 mins.
Heat a pan and transfer the paneer and pesto in the pan and gradually mix it as all the pesto mixes well, you might have to add some water so it allows paneer to absorb the flavours.
Taste and adjust seasonings and once that is done add some honey and more lemon juice and pepper if needed.
Now creamy pesto paneer is ready, all you need to do is serve it on a toast or tortilla or just like that and enjoy.
