Peel the almonds and add in a grinder along with basil leaves, black pepper, lemon juice, garlic and olive oil and make a coarse paste. You might need to add more oil or water to get a coarsely done pesto.
Next transfer the mixture in a bowl and mix the paneer cubes and keep aside for some 10 mins.
Heat a pan and transfer the paneer and pesto in the pan and gradually mix it as all the pesto mixes well, you might have to add some water so it allows paneer to absorb the flavours.
Taste and adjust seasonings and once that is done add some honey and more lemon juice and pepper if needed.
Now creamy pesto paneer is ready, all you need to do is serve it on a toast or tortilla or just like that and enjoy.
