Capsicum and Cheese Dip was totally experimental. Why this experiment? Well I had a fresh capsicum and considering they are rich in Vitamins and Minerals and my son otherwise would not have them. So, I thought of trying this out.
Well the addition of Cheese in this Capsicum and Cheese Dip was only to make it luring enough for him. However I felt it goes very well with wafers or even nachos or baked chips if you are fond of along with using it in sandwiches. I used some coriander to balance the taste of Capsicum and add more green color and it worked well. So just to let you know , I had this Capsicum and Cheese Dip with plain rice and curd and just loved it!
Capsicum and Cheese Dip
Ingredients
- 1 Green Capsicum
- 4 Garlic Cloves
- 4 Almonds
- 1 tbsp Olive Oil
- 1/2 tsp Black Pepper
- 1 tsp Lemon Juice
- 1 tbsp Cheese Spread
- 1/2 tsp Salt
- 1/2 tsp Sesame Seeds
- 1/2 cup Coriander Leaves
Instructions
Soak almonds and then peel them, incase you are short of time you can use them as it is.
Take 1/4 tsp of olive oil and smear around the capsicum and on medium flame roast it till its done from all sides.
After it is charred from all the sides put it in cold water and rub off the charred skin.
Now de-seed it and cut the green part into cubes and add in blender along with almonds, coriander, 1/2 tbsp olive oil,salt, lemon juice and garlic and blender till it smooth.
Next add some cheese spread (optional if you want to have this as chutney) to make it little creamy and smooth.
Sprinkle some sesame seeds and chopped nuts and serve with roasted wafers.
