This is Broccoli and Corn Stir Fry, as I could put in the most simple manner. Now while I was thinking what to name it, to me it looked like a Stir Fry so I thought to use the name as it is.

But here is the real story, we conducted Food Bond session last Sunday and has Broccoli left from the workshop, so I thought to use those Broccolis. Now I love coconut milk when put in gravies and then I had other vegetables too, so I did this twist and trust me it came out heavenly.

So my take on this recipe of Broccoli and Corn Stir Fry is that people who don’t otherwise like Broccoli will end up liking too, also it does’t have an overpowered coconut taste as cinnamon balances it well. So all in all this Broccoli and Corn Stir Fry tastes great.

Ingredients

  • 1 cup Broccoli
  • 1/2 cup Sweet Corn
  • 1/2 cup Diced Carrots
  • 1/2 cup Chopped Onions
  • 1 tbsp Chopped Garlic
  • 1 tbsp Chopped Ginger
  • 1/2 cup Coriander
  • 1/2 cup Coconut Milk
  • 1 tbsp Cinnamon Stick
  • 4 Pepper Corns
  • 1 tsp Salt
  • 1 tsp Olive Oil
  • 1 Green Chilli
  • 1/2 tsp Sesame Seeds

Instructions

  1. Heat oil and add cinnamon stick and pepper corns

  2. Add onions and saute for few seconds till they are translucent and then add ginger and garlic.

  3. Now add all the vegetables with dash of salt and cook on low flame without covering.

  4. Simultaneously make a paste of coriander with coconut milk and green chilli and add it as the vegetable as being cooked.

  5. Mix them well and add little water to adjust the sauce and keep cooking till vegetables absorb all the coconut milk and water evaporates.

  6. This will dry out in some 4-5 mins and once done garnish with some sesame seeds and serve either with rice or paratha.
