Here is a recipe of a super easy and equally healthy recipe, however I have used Pita bread, you can use regular too. But the catch is in the spread made out of cauliflower. Yes!! Cauliflower and trust me you would love it a lot.
Its a great way to pack nutritious sandwiches and rolls in tiffin and add more vegetable content in the daily diet too. Since its hassel free, you don’t have to have too much ingredients and can make this on the go. So here is the recipe of the spread and also the Marinated Vegetable Sandwich.
Marinated Vegetable Sandwich
Ingredients
- 1/2 Zucchini
- 1/2 Tomato
- 1/2 Onion
- 1 tbsp Apple Cider Vinegar
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1 tsp Olive Oil
- 1/4 tsp Garlic Powder
- 1 cup Blanced Cauliflower
- 1 tbsp Cottage Cheese
- 2 cloves Pan Roasted Garlic
- 1/4 tsp Mixed Herbs
- 2 tsp Green Coriander Chutney
- 2 Pita Bread
- 1 Garlic Clove
Instructions
Take mixer and add blanced cauliflower florets, garlic clove, 1/4 tsp black pepper, 1/4 tsp mixed herbs, cottage cheese and make a smooth paste and keep aside.
Now cut the pita breads into quarters and on one side put the spread on the other green chutney
Cut slices of Zucchini, Onion and Tomato and marinate them in apple cider vinegar, salt, black pepper and chilli flakes for 5 mins
Now grill these on a pan and for 2 - 3 mins.
Once the vegetables are grilled, layer them on the white spread and cover it with chutney side.
Grill the pita bread by pressing so you can get the grill marks on it.
Serve this with the vegetable spread you prepared with cauliflower.
