Beans and Mango Salsa is just that perfect summer special which combines lot many flavors together, inspite of being super simple to make. With just handful of ingredients the beauty of this recipe is that this one Beans and Mango Salsa can be used as an appetizer with Khakhra /Crackers as shown in the picture, or can be your quick salad too.
Ripe sweet mangoes give it is the base flavor while lemon and chilli add more kick. Beans provide protein and carbohydrates, while Mango adds fibre, vitamins and lots of taste.You can't miss the amazing flavours with every bite. To add little more contrast to this whole patter, adding a base of strawberry jam under the topping of salsa just helps playing a bit more with your taste buds.

- Ripe Mango: 2 tbsp diced
- Onion: 1 tbsp chopped
- Lemon Juice: 1 tsp
- Green Bell pepper: 1 tsp chopped(optional)
- Green Chillies: 1 chopped
- Coriander: 1 tbsp chopped
- Salt: as per taste
- Boiled Beans: 2 tbsp
- Khakhra/Crakers: 2 cut into small pieces
- Strawberry jam: 1/2 tsp
- Flax seeds powder: 1 tsp
- Take a bowl and add diced ripe mango, onions, green chilli, bell pepper, salt, lemon juice and coriander and give it a nice mix.
- Now add boiled beans to this and mix again. Check the seasonings and adjust.
- Take Khakhra and on few spread the strawberry jam , while keep rest just like that.
- Top it up with the Beans and Mango Salsa, sprinkle flax seeds powder and enjoy the fresh flavors.
