I love making pulav when it is just me at home. Saves me from getting into making elaborate food , use less utensils and also not compromise on nutrition. Makai Palak Pulav is one such recipe which I have tried many times and somehow Palak (Spinach) and Makai (Corn)go well together. Even the two as a sandwich combination or Paratha stuffing also are equally yummy. The best part of making this Makai Palak Pulav is, it is not just simple and quick but gives the nutritional content of a good meal. Now to add to the taste I personally love the food texture and the color which this Pulav has which makes it even more tempting. You can replace corn with boiled chickpeas too.
Infact since I keep making it when my husband travels apparently he never got an opportunity to actually taste it. This also can be a quick and tasty weekday delight for you. I am sure you would love Makai Palak Pulav as much as I love it with Pudina Raita.
- Sweet corn kernels: 1 cup boiled
- Spinach: 1cup chopped
- Rice: 1 cup
- Onions: 1 sliced
- Green Chilli: 1 slit
- Bay leaf:1
- Cardamom: 2
- Cinnamon: ½ inch
- Cloves: 4
- Cumin seeds: 1 tsp
- Ginger paste:1 tsp
- Garlic paste: 1 tsp
- Salt: to taste
- Cumin powder: 1/2tsp
- Garam masala: 1/2tsp
- Oil: 1tsp
- Heat oil in wok and add cumin seeds.
- Now add bay leaves, cloves, cardamom, cinnamon and let it get light brown.
- Add ginger garlic paste and then onions.
- Once onions are brown add corns and salt and cook for 5 mins.
- Add 1 ½ cups water and cumin powder and bring to boil
- Now add rice ,garam masala and chopped spinach and cover and let it cook till water is soaked and rice is done.
- Serve it hot with Raita
