Apple and Almond Kheer

Mondays are generally fruit days for me, reason not that I diet but after eating all not so healthy food over the weekend I feel its good to give some break to your system. This Apple Almond Kheer is outcome of one of such Mondays when I was craving for some sweet but wanted to stick to fruits and milk only. This makes it a an ideal try for fasting too. Doesn’t take much time to cook and offcourse Apple Almond Kheer is tempting enough by name itself. First time when I tried I felt like it was the eureka moment for me. It came out as one of the best Kheer I would have ever made (considering I make it quite often).

This Kheer has nutrition and you can avoid milkmaid and just use sugar or jaggery too once milk has reduced to the required consistency and make it more healty. I personally love the taste and speed which milkmaid gives to the puddings .But choice is all yours and I can assure you for the taste and all the praises you would get for this.

Ingredients
  1. Apple: 1 peeled and grated
  2. Almonds: 10 grinded to nutty powder
  3. Sugar: 1 tbsp
  4. Milk: ½ litres
  5. Milkmaid: 2 tbsp
  6. Cinnamon powder: ½ tsp
  7. Cardamon powder:1/2tsp
  8. Raisins and Saffron : for garnish
Instructions
  1. Start with boiling milk in think bottomed pan till it reduces to ¾ or ½
  2. In a separate pan add apple and sugar and let it cook together till apple becomes like one brown ball.It would have caramelized with sugar and lost most of its water by now.
  3. To apple add cinnamon powder and cook it for another one minute.
  4. Meanwhile add milkmaid to the milk and keep boiling till it becomes enough thick.
  5. To this add almond powder and keep cooking for some more time.
