Heat a pan and the oil and saute finely chopped garlic and meanwhile soak soya granules on hot water and let it soaked for 5 mins and then squeeze it out and wash under fresh water multiple times , each time squeezing the excess water. This would avoid the pungency which Soya has.
Next add green chilli and onions to sauted garlic and cook till its translucent and then add tomato and bell pepper and cook with little salt till is done but avoid over cooking capsicum. You can also add capsicum after tomatoes have turned tender.
Next add soya granules and adjust salt and black pepper and cook , as you mix it well on a low flame.
Once its done, put off the flame and add fresh coriander leaves and lemon juice and keep it aside
Take bread slices , cut the crust and roll it to flatten more and then cut into small squares.
Now spread green chutney on one square and red on another and add the soya, some grated cheese and make a sandwich. Gently close all the four edges with finger tips as to lock it and then with a fork press it to have its impressions.
On a pan gently cook these small square pockets as you grill them and serve hot with chutney. You can also cut them from between and serve like mini sandwiches.
