Make a paste of lemon grass with ginger and garlic.
Heat oil in a wok and saute this paste till its done and then add turmeric and cook for a min.
Dry roast chickpeas flour or besan and then add into the wok and cook till its nicely done.
Lower the flame and add the coconut milk and you keep mixing it to avoid any lumps. Add some stock as it thickens up.
Add it bubbles up once start adding the veggie with some salt and let them cook on slow flame.
Once the veggies are done now its time to serve.
Take a deep bowl and add noodles and then then soup and top up with fried onions, garlic, chilli oil, chopped green onions, peanuts and squeeze some lemon juice with chilli flakes etc and enjoy.
