Ingredients

  • 1 cup Jowar Flour
  • 6 Dried Figs (Anjeer)
  • 10 Dates
  • 3 tbsp Ghee
  • 2 tbsp Chopped Almonds
  • 1/2 tsp Vanilla Essence
  • 1/2 tsp Cardamom Powder
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/4 cup Milk

Instructions

  1. Soak Figs and Dates separately in water for an hour and then add in a mixer and make a thick grainy paste with 1 tbsp of water and vanilla essence.

  2. Now take a pan and heat 1/2 tsp ghee and add the mixture and start drying till all the little water it has it evaporates and it all comes together in dark brown stick lump. Let it cool now.

  3. Add baking soda, salt and cardamom powder in the jowar flour and sieve it once.

  4. Now to this add ghee and then sticky fig and dates mix.

  5. Slowly bring all the things together as you gently mix them all. Add almonds and milk to make a soft dough. Remember to mix them and not knead them or otherwise the cookies won't be crispy.

  6. Now keep the cookie dough covered in refrigerator for 5 to 10 mins as you prepare the oven by putting it on preheat.

  7. After that take out the dough and roll it up gently and use cookie cutter to give shapes. You can also use the dough directly to fill up the cookie cutter grooves and shape the cookies as desired.

  8. Now put these for baking at 180 degrees for 10 mins one one side and then flip for another 7 mins on the other side. Let it cool down before you enjoy these yummy dried fig cookies.
