Makhana & Banana Chewy Cookies

Ingredients

  • 1 cup Fox Nuts
  • 1/4 cup Oats
  • 2 Ripe Bananas
  • 1/4 cup Almonds
  • 1/4 cup Milk
  • 2 tbsp Dry Dates Powder
  • 1/4 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1 pinch Salt
  • 1 tsp Vanilla Essence

Instructions

  1. Dry roast both Fox nuts and Oats separately and then powder them too separately. Dry roast almonds too and coarsely powder them too.

  2. Next add both the powders in the mixture again along with dry dates powder and pulse it couple of more times.

  3. Empty this mixture in a bowl and gently mix salt, almonds, baking powder and baking soda and keep aside.

  4. In a bowl mash bananas and add vanilla essence and milk and mix well.

  5. Gradually add all dry mix and make a soft dough. Use more milk if its very dry as the dough should not be very tight but soft.

  6. Preheat the oven and keep the dough for 10 mins proofing covered with a cloth.

  7. Now take small balls of dough and flatten them with hands in shape of cookies. You use fork to press and make a design too or use cookie cutters.

  8. Grease a baking tray and keep all the cookies on it with 2 inches distance amongst each other.

  9. Bake these each side for 8 to 10 mins at 180 degree C. You would have to flip it over after one side is brown. Cool it and keep in fridge and enjoy the soft chewy Banana flavoured cookies.
