Khatte Meethe Kaju is the easiest diwali recipe I would have tried in years. This however was a quick hack as I have received 2 kgs of cashew as diwali gift. So yes, don’t wonder if you see lot of back to back cashew recipes. When life gives you cashew , you make Katte Meethe Kaju.

The recipe too was accidental as I was making tamarind and Jaggery Chutney for dahi wada and suddenly thought to make dip the cashews in the sauce and voila the recipe was invented.

I love when I end up making such quick fix and easy recipes , specially for parents who are looking for simple and easy recipes for kids. Cashews are good fat and rich in protein and fibre and also make a good evening snack. A handful of these nuts are good enough and this way they taste even better.

Ingredients

  • 1 cup Cashew
  • 1 tsp Salt
  • 4 tbsp Jaggery
  • 1 tbsp Tamarind Paste
  • 1/4 tsp Black Pepper
  • 1 tsp Ghee

Instructions

  1. Mix ghee and salt with cashew and bake it at 180 degrees for 15 mins and then let it cool.

  2. In a pan add jaggery and tamarind paste with 3 tbsp of water and heat it.

  3. Mix it as it bubbles up and becomes thick sauce and at the moment mix cashew and then when its coated on all the cashew take it out on a butter paper.

  4. Make sure they don't stick to each other and sprinkle some black pepper on it.

  5. Keep this in refrigerator
