Achaari Chole Pulav is that simple twist in your regular pulav along with goodness of chole in it. While most of the times we add vegetables in the pulav but here we added chole. This not just makes this meal complete but also saves you from making chole seperately. One pot meal which is easy and healthy for sure. So when in hurry , go ahead and make some Achaari Chole Pulav and you won’t regret.
I have also used mustard oil and that does well with achaar flavour but otherwise any other oil too would work. Then in addition of panch phoran that’s mustard, fenugreek, cumin, fennel and nigella don’t miss the pickle or home made achaar masala. That takes this whole pulav to next level. Remember the oil is minimal so try to eat this when its fresh and warm otherwise you will find it dry. Feel free to combine with raita of choice, I made a quick aloo raita and some chutney. You must try this recipe on day when you don’t want to make anything fancy but still nice and interesting.

Achaari Chole Pulav
Ingredients
- 2 cup Boiled Chole
- 1 cup Rice
- 1 Onion Chopped
- 1 tsp Ginger Paste
- 1 tsp Garlic Paste
- 1 Tomato Chopped
- 1 tbsp Pickle Masala
- 1/4 tsp Fenugreek Seeds
- 1/4 tsp Mustard Seeds
- 1/4 tsp Fennel Seeds
- 1/4 tsp Onion or Nigella Seeds
- 1/4 tsp Cumin Seeds
- 1 Bay Leaf
- 4 Pepper Corns
- 4 Cloves
- 1 tsp Turmeric
- 1 tsp Coriander Powder
- 1/4 tsp Red Chilli Powder
- 1 tsp Cumin Powder
- 1 tbsp Salt
- 1 Lemon
- 1 tbsp Chole Masala
- 1 tsp Aamchur Powder
- 1 tsp Jaggery powder
- 2 tbsp Coriander Chopped
- 2 cup Veg Stock or Water
- 1 tbsp Mustard Oil
- 1 Green Chilli
- 1 tsp Pomegranate Seeds
- 1 tsp Chia seeds
Instructions
Soak rice for min one hour before using and when you boil chole add some salt and cloves in water.
In a wok heat mustard oil and add all the whole masalas like cumin seeds, fenugreek, nigella, fennel, mustard and then bay leaf, pepper corns and clove and mix well.
Now add 1 green chilli, sliced onions and after they caramalise a bit add ginger and garlic and then tomatoes and cook till tomatoes are soft and done.
Now add turmeric powder, cumin powder, red chilli powder , aamchur powder and chole masala and mix well.
Add a little jaggery powder and add boiled chole and mix well along with soaked rice .
Top this up with aam pickle masala or any other home made pickle and then add veg stock/water and let it cook on slow flame till rice is done.
You can serve this with some Pomegrenate, coriander leaves and chia seeds topped up along with some green chutney and aloo raita.
