Wholewheat Almonds Cookies is what I could think of as we neared Christmas. Those of you know my knack for making everyday food healthier, I really felt like doing some baking around December. So went ahead and bought some christmas tree and cookie man shaped cookie cutters to prepare some simple cookies. Keeping them simple, I used wholewheat flour and for sweetner my all time favourite Jaggery.
Now to cut down the earthiness of whole wheat I have used a little bit of coffee. So coffee with vanilla helps blend well together and give a nice taste. However since the coffee used is less, its not dominating the flavour. You can change that proportion and also use some cocoa instead in these Wholewheat Almonds Cookies.
The good part of these Wholewheat Almonds Cookies are that you can make your own variations with nuts or chocochips too and they would turn out equally good. I infact had some thoughts of trying out this recipe of Wholewheat Almonds Cookies with nut butter instead and that too would happen soon.
If you are in hurry you can skip the refrigerator part but I just felt it gives easy in handling the dough of these Wholewheat Almonds Cookies. So would recommend the step but then its not mandatory.
Wholewheat Almonds Cookies
Ingredients
- 1 cup Wholewheat Flour
- 3/4 cup Jaggery
- 4 tbsp Ghee
- 1/4 cup Milk
- 1 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 cup Almonds (Powdered)
- 1 tsp Coffee Powder
- 1 tsp Vanilla Essence
Instructions
First take a deep bowl and add jaggery , coffee , vanilla essence and ghee together and mix them well. I use electric beater as then all the ghee with other things get enough air incorporated for later to make the cookie crispy.
Next add baking soda and salt in the flour and sieve it twice. Now with two spoons at a time start mixing this flour into the ghee and jaggery mix.
Be gradual but do not over mix. You can use little milk to make the dough softer but remember it still have to be dough and not batter.
At the end add almonds powder and mix it well.
Use hands to bring the dough together and then keep the dough in refrigerator for 15 mins
Preheat the oven at 180 degrees and then bring out the dough and with hands roll it. Use cookie cutters to gently cut the shapes of desire.
Transfer cookies in a baking tray and then bake for 10 mins and then gently flip the cookies and bake on the other side for 5 mins. Let it stay in the over for 10 mins and then cool it on a rack.
Drizzle some powdered sugar and serve your christmas cookies.
