Foxnuts and Bajra Cookies are here to rule my kitchen for sure!! Had I known making them will be so easy and the outcome will be this tasty, I would have certainly tried them before. So once again thanks to Tasneem for her Bajra Cookie recipe on which I added my modifications of Jaggery, Foxnuts and Almond butter to get some really nice and crunchy cookies.
I am not a cookie fan but my son ofcourse is! Its so difficult to have a life without packed cookies at home with him , so when I was trying this recipe he jolly well joined me too. Since this was the first time I was baking cookies, you can imagine my apprehension. But then these Foxnuts and Bajra Cookies didn’t let me down and now I can only ask you to go and try out the recipe.
Foxnuts and Bajra Cookies
Ingredients
- 2 cup Dry Roasted Foxnuts
- 1 cup Bajra Flour
- 1 cup Almonds
- 1/8 tsp Baking Soda
- 1/8 tsp Salt
- 1 cup Jaggery
- 50 gms Butter
- 2 tbsp Rice Bran Oil
- 2 tbsp Desiccated Coconut
- 1/2 cup Warm Milk
Instructions
Dry roast fox nuts and make a fine powder of it and transfer in a bowl along with Bajra flour, jaggery, baking soda and salt.
Dry roast almond and put them in a grinder and along with some oil pulse it. It would first turn in powder but as you keep mixing it would started releasing oil and turn into almond butter which is a lumpy and sticky.
Add almond butter and regular butter too in the bowl you have added the flours and with your hand gently mix them.
Once they are all mixed well you need to add 1/2 cup warm milk to combine all the things into a soft dough which is you cookie dough. Cover the dough and let it rest for some 10 mins atleast.
Now roll the dough with help of your hand on a flat surface and then with help of cookie cutter make different shapes.
Meanwhile take a baking tray and spread butter evenly on the surface.
Preheat the oven for 10 mins and then set it on 180 degrees and bake the cookies for 20 mins and then let it cool down for some 10 mins before you enjoy the crunchy Foxnuts and Bajra Cookies.
