I love Kaju Masala since I was kid. Remember eating loads of it and then mom scolding me as it would upset my stomach. As kids we all have such fond memories and sometimes with my food I love recreating those experience for my self and my son. Well if you follow my facebook page then you would know about #RDTrailMix and how I insist about kids eating nuts regularly. Well as we do that Kaju Masala is Kaju Masala!! but I didn’t wanted to deep fry them as that makes you lose nutrition but also adds lots of trans fat which isn’t required.
So here is a toasted version which did turn out to be quite good. The trick here is on make the masala as tasty as possible and then using the right amount of ghee in which you mix masala which makes it stick on the cashews. I would suggest make in small batches, you can always keep the masala handy and whenever needed roast and add. So on that note, lets go to the recipe of Roasted Kaju Masala.
Roasted Kaju Masala
Ingredients
- 1 cup Cashew
- 1 tbsp Ghee
- 1 tsp Chat Masala
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/4 tsp Flax Seed Powder
- 1/4 tsp Chilli Powder
- 1 tbsp Jaggery Powder
Instructions
Dry roast Cashew in a wok on slow flame for 5 mins or till they start smelling roasted.
Now warm the ghee and add all the masalas and mix well.
Quickly add the masala into the wok which has Cashew and still on slow flame mix for 30 sec only to avoid the burning of masala.
Keep stirring after the flame is put off so the masala coats evenly.
Let it cool down and store in air tight container
