A few days back I posted the making of this 4PM snack on FB live and thankyou so much for loving it and asking for the recipe. Many moms reach out to me asking for evening snacks and that’s why my focus for sometime now, is around creating easy recipes which can be a great snacking option too. Infact these are good for everyone else too, who crave for an evening snack.

Evenings are the time when we eat most junk food and if that can be controlled then you are definitely on a life leading to healthy habits. So while I was thinking what to make , I found some Aloo-Matar-Gobhi from my lunch as an easy option to convert it into these yummy Vegetable Lollipops. Well incase you don’t have skewers feel free to make them like flatted kababs, for the shapes won’t change the taste.

Next day after trying this recipe , I used the next day’s lunch vegetable (green beans and carrot) for making tikkis and they turned out super yum too. So lets get going towards these yummy Vegetable Lollipops.

Vegetable Lollipops

Ingredients

  • 1.5 cup Left over cooked vegetable
  • 1 slice Whole wheat bread
  • 2 tbsp Roasted oats
  • 1 tsp Lemon juice
  • 1 tsp Chat masala
  • 1 tbsp Oil
  • 1 tbsp Coriander leaves
  • 1/2 cup Cottage cheese

Instructions

  1. Make a powder of oats and whole wheat bread and keep aside

  2. Take a bowl and add cooked vegetables, paneer , bread and oats mixture, lemon juice, chat masala, coriander seeds and mash it well.

  3. Take skewers and roll the mixture in an oval but little flattened shape.

  4. Now smear some oil in a grill pan and grill these with the skewers or seekhs on.

  5. Once they are brown from all the sides serve with green chutney.

  6. Feel free to adjust seasonings as per your choice, eg pepper, chat masala etc.
