And then I tried Smoked Tomato Pesto which worked wonders for me. Reason is simple, that I love smoky flavor and anything which can be used in multiple ways. This was a dip, spread, gravy enhancer, soup add all in one for me. The smoky flavour of and the tanginess of tomato just made it ideal for so many of my recipe experiments.
So making Smoky Tomato Pesto was worth a try for me and not to mention my kiddo loved it too.
I used this pesto in this roti rolls and sandwiches and we totally skipped any cheese or sauce, no wonder I started regretting soon for making it in lesser quantity. So as I prepare for my next batch here is the quick recipe for you.
Smoked Tomato Pesto Sandwich
Ingredients
- 2 Tomatoes
- 1 tsp Olive Oil
- 6-7 Garlic cloves
- 10 Almonds
- 1 tsp Red Chilli Flakes
- 1 tsp Salt
- 1/2 tsp Brown Sugar
- 1/2 tsp Tomato Ketchup (Optional)
- 1/2 tsp Lemon Juice
- 1 Small coal piece
- 1/2 tsp Black pepper
- 100 gms Cottage Cheese
- 2 slices Whole wheat bread
Instructions
Soak Almonds in water for 2 hrs and then peel it
Cut tomato in slices and sprinkle 1/2 tsp oil, black pepper and salt and bake at 180 degrees for 20 mins till they are roasted well.
Now sprinkle some oil on the garlic and roast it directly on the flame.
Next peel the almonds and add in a mixer along with tomato, garlic, salt , sugar, chilli flakes and make a paste of it and transfer in a bowl.
Now heat up the coal directly on fire and when its red hot take a bowl with little ghee and keep in the middle of the bowl which has the Pesto . Now keep the red hot coal and it would start fuming as it meets the ghee, or you can add little more over it. Cover the bowl with the lid so that the fumes are trapped and the pesto get the smoky flavor.
Take paneer and cut in a slice and saute it some oil , salt and black pepper.
Take two slices of a bread and spread the pesto on both of them and put the layer of Paneer slice and toast it on a pan.
Now this is good to start your day.
