Lauki Rabri Shots are here, though I have used cutting glasses which are my way of looking at the traditional shot glass. Idea was to make something yummy, presentable and healthy for this festive season. While I was looking for ideas, this one clicked me , simply because its so easy and yet full of the goodness I can ask for.
A Rabri which makes you feels light and you can keep asking for more. Isn't that wonderful!!
When my son tasted it..he asked for more, that also means he didn't get the taste of bottlegourd at all and that was a good verdict for me. While he is little picky about the kheer, this Lauki Rabri Shots went well with his taste preferences.
You can also top it up on some gulab jamuns/Jalebi or simple ruck and enjoy the yumminess of the whole thing more. Lauki Rabri Shots is something you family would love this Diwali and anytime after that. A perfect light desert after dinner is this for sure!!
Here you go with the recipe.
- Grated Bottlegourd/Lauki: 2 cups
- Milk: 3 cups
- Cardamom Powder: 1 tsp
- Sugar/ Brown Sugar: 2 tbsp
- Ghee: 1 tsp
- Raisins: 1 tsp
- Almonds: 10
- Cranberries: 10
- Roast the almonds and keep aside.
- Take a wok and heat the oil and add grated bottlegourd and saute it for 5 mins.
- Pour milk and cook till it gets thick and bottlegourd is all cooked too.
- Now add sugar , cardamom powder , raisins and 5 chopped almonds and let this cool.
- Make fine powder of rest of the almonds.
- Now put the bottlegourd kheer in a mixture and make a fine paste.
- Pour this paste in a shot glass and then on top sprinkle a layer of roasted almond powder and garnish it with cranberries.
- Refrigerate it for 30 mins before serving to your guests.
