Italian Uttapam just rocked my last weekend breakfast and my family kept asking for more. I had this idea of giving my Uttapam some Italian tadka and this Italian Uttapam just tasted too good. Infact my dear son had it with some cheese toppings on top of it and for him it was more of a pizza than uttapam and I was happy to make him feel so.

While my son kept wondering about the pizza , my husband was enjoying the new uttapam with italian toppings and I was finishing mine in the kitchen itself. That's the beauty of sunday breakfast , as half of it gets finished in the kitchen itself. We had little over dose of these beautiful and colorful Italian Uttapam and skipped the lunch for some movie and popcorns. Now that's what we call an awesome weekend that was!!

Ingredients
  1. Dosa Batter: 2cups
  2. Olives: 6-7
  3. Boiled sweet corn: 2 tbsp
  4. Capsicum: 2 tbsp diced
  5. Pesto: 1 tsp
  6. Red chilli flakes: 1/4 tsp
  7. Salt: as per taste
  8. Oil: 1 tbsp
Instructions
  1. Mix pesto in dosa batter with salt and red chilli.
  2. Heat a small pan and add 1 tsp oil and then pour 3/4 cup batter.
  3. Now top it up with olives, corn and capsicum and cook it covered.
  4. Once its done on one side turn it upside down and cook for 2-3 mins.
  5. Serve it with tomato sauce and enjoy your breakfast.
