Chutney Pasta Salad! Not sure why I didn't try this any earlier. Its is the simplest pasta I could have made. Most of the ingredients are available at home apart from black olives, but that's just to give it a salad feel more. You can skip incase you don't have. Another catch is the hung curd shouldn't be too sour our else mix some mild in it. Using fresh curd does  the task well.

So all I did was took out some green chutney and mixed it up in the hung curd and that was my pasta sauce. With some parmesan offcourse to add to the creaminess and a gentle mixing with olives and boiled pasta was all I needed with my lovely green pasta sauce. To give it more color , I added diced omelette and that one went perfect with  Chutney Pasta Salad.

Ingredients
  1. Pasta: 2 cups boiled
  2. Green Chutney: 2 tbsp
  3. Hung curd: 2 tbsp
  4. Parmesan Cheese: 1tsp
  5. Virgin olive oil: 1/2 tsp
  6. Garlic powder: 1/4 tsp
  7. Salt: to taste
  8. Egg:1
  9. Oregano: 1/2 tsp
  10. Chilli flakes:1/4 tsp
  11. Black olives: 4-5 sliced
  12. Oil:1/2 tsp
Instructions
  1. Heat a pan and pour beaten egg with salt, oregano and chilli flakes to make an omelette.
  2. Mix hung curd, garlic powder and green chutney with salt if needed.
  3. Add olives, olive oil, pasta to it.
  4. Sprinkle some parmesan and top it up with diced omelette and enjoy a healthy and fulfilling meal.
