The best part of this Sweet Potato Pav Bhaaji is all the goodness loaded vegetables which just makes it too scrumptious. So one of these days when I was figuring out to make my son try out different vegetables ,  Sweet Potato Pav Bhaaji came as rescue. One recipe which had sweet potato , pumpkin and beetroot base. Once this  Sweet Potato Pav Bhaaji was ready all I wondered, why did I not try this any earlier.Infact in this recipe of Sweet Potato Pav Bhaaji , I tried adding some more interesting vegetables to make it tastier and healthier.

Sweet Potato and Pumpkin gives a nice sweet flavor, while Beet gives a beautiful color and then capsicum enhances the taste of the entire pav bhaaji. I feel you can replace any vegetable but capsicum from Pav Bhaaji recipe and some how Pav Bhaaji is incomplete with it. So coming back to our Sweet Potato Pav Bhaaji this one will make you feel much happier and healthier and you can make your kids have it over and over again.

Ingredients
  1. Sweet Potato : 1 boiled & grated
  2. Beet root : 1 boiled & grated
  3. Peas: ¼ cups
  4. Pumpkin: 1 cup blanced
  5. Carrot: 1 cup chopped and blanced
  6. Cauliflower: ½ cup blanced
  7. Capsicum: 1 chopped
  8. Tomato puree: 1 cup
  9. Onion: 1 chopped
  10. Ginger Garlic paste: 1 tbsp
  11. Cumin seeds: ½ tsp
  12. Cumin powder: 1 tsp
  13. Bay leaf:1
  14. Cinnamon: 1 small
  15. Garam masala: ½ tsp
  16. Lemon juice: 1
  17. Pav Bhaaji Masala: 1 tsp
  18. Salt: to taste
  19. Oil: 1 tsp
Instructions
  1. Heat oil and add cumin seeds to splutter and then bay leaf and cinnamon.
  2. Add ginger and garlic paste and sauté it for a minute.
  3. Add onions and sauté it for 2 minutes and then add capsicum and cook for a minute again.
  4. Now add tomato puree, salt, cumin powder and garam masala
  5. Once this masala is done make a paste of it and then add in the pan back.
  6. Now add all the blanced vegetables and the grated ones and mix it with masala.
  7. At this stage add pav bhaaji masala and cook with on slow flame .
  8. Add some water and then cook it covered till its done.
  9. After 5 mins add lemon juice and serve with pav and chopped onions and coriander
