Here is my favorite version on pav bhaji which is actually healthy pav bhaji. Not that I don't like the regular pav bhaji but the goodness this healthy pav bhaji brings is out of the world.This recipe has beetroot, pumpkin, sweet potato , carrot all what your kids would have without knowing the reality. Isn't that interesting?

I love making this regularly for my family and the red color which beetroot gives is also very tempting. Infact this red color makes the whole healthy pav bhaji more inviting and what more would you want. If you follow the recipe, you would realise that my procedure is little different and that does bring lot of change in the pav bhaji along with speedy cooking. The ingredients are simple can you also add bottle gourd incase you have one in addition to all the vegetables added and that would only enhance the taste.

Ingredients
  1. Sweet potato:1 boiled
  2. Beet root: boiled 1/2 cup
  3. Pumpkin: blanched 1 cup
  4. Peas: 1/2 cup blanched
  5. Capsicum: 1/2 cup finely chopped
  6. Carrot: 1/2 cup diced and blanced
  7. Tomato: 2 chopped
  8. Onion: 1 finely chopped
  9. Ginger garlic paste: 1 tbsp
  10. Bay leaf: 1
  11. Cinnamon: 1 inch
  12. Black pepper corns: 4
  13. Red pepper powder: 1/2 tsp
  14. Salt: as per taste
  15. Cumin powder: 1 tbsp
  16. Cumin seeds: 1 tsp
  17. Coriander powder: 1 tbsp
  18. Lemon juice: 2 tbsp
  19. Sugar: 1/2 tsp
  20. Oil: 1 tbsp
  21. Coriander leaves: 1 tbsp
  22. Pav bhaji masala: 1tbsp
  23. Pav: 4
Instructions
  1. Heat oil and add bay leaf, black pepper corns, cumin seeds and cinnamon.
  2. Saute onions till its golden and then add ginger garlic paste and cook till raw smell goes away.
  3. Now add chopped tomatoes, capsicum and some sugar, cook for 2 mins.
  4. Now add coriander powder, cumin powder , salt and cook for some time till masala is done.
  5. Put this in a grinder and make a paste of it and then add this back to the wok.
  6. Now mash all the vegetables and add this to the wok and give it a good mix.
  7. Add pav bhaji masala and some water and cook for 5-6 mins till it sets on boil.
  8. Put this on slow cooking for some 5 more minutes and then add lemon juice and fresh coriander and serve hot with toasted pav.
