These roasted pepper pasta came to my mind when I was tempted to make some pasta after a weekend went away fighting cough and cold. However didn't wanted to make it too heavy or loaded with cheese and that's when thought of giving tomatoes a rest and try our roasted pepper pasta made out of red belle peppers.

Now the smoky flavor of roasted bell pepper made roasted pepper pasta turn out to be scrumptious and this offcourse enhanced the taste of the pasta. Though cheese is optional but trust me this  roasted pepper pasta without cheese too is just super yummy and you wouldn't miss adding cheese. However when giving it to kids add a generous amount of cheese and let them enjoy it that way.

Ingredients
  1. Red Bell Pepper: 1
  2. Garlic: 4 cloves
  3. Onion: 1 chopped
  4. Oregano: 1/2 tsp
  5. Red chilliflakes: 1/2 tsp
  6. Salt: as per taste
  7. Black Pepper: 1/4 tsp
  8. Milk: 1/2 cup
  9. Cheese: 2 tbsp (optional)
  10. Olive Oil: 1 1/2 tbsp
  11. Pasta: 2 cups
Instructions
  1. Smear some olive oil on the bell pepper and roast it on direct flame for some 5 mins, evenly from all the sides.
  2. Once its roasted drop it in a cool water for some 2-3 minutes and later peel off the skin and finely chop the roasted pepper.
  3. Cook the pasta with some salt in boiling water and strain and keep some reservoir pasta water.
  4. Heat oil and add chopped garlic and saute it for 30sec before adding onions to saute for a minute.
  5. Now add roasted bell pepper and cook with some black pepper and salt.
  6. Once this is cooked blend this mixture and make a paste of it with some pasta water if needed.
  7. Now pour the paste in the wok and cook for a minute and then add black pepper, red chilli flakes , milk and some oregano.
  8. Mix pasta in this sauce and serve hot with some grated cheese.
