Tomato Paneer

I tried Tomato Paneer on one of the Monday's when I usually fast  and then it was my son who just wanted to have Paneer and that is the beginning story of Tomato Paneer.I checked my fridge and saw some fresh tomatoes which just made me do some quick fix for a yummy sweet and creamy Tomato Paneer. I used low fat milk but you can use cream too incase you have guest coming over and you want some quick Tomato Paneer to be served.

However my son loved the milk version on Tomato Paneer and not to miss that hubby too ate it with smile on his face.These two parameters are enough to tell me that Tomato Paneer was a hit for sure. Sometimes cooking out of, what's in your fridge is the most interesting challenge. Replacing some ingredients with what you have and creating a completely new recipe of you own.Tomato Paneer is that recipe.

Ingredients
  1. Oil: 1 tbsp
  2. Cumin Seeds: 1 tbsp
  3. Cinnamon: 1 tbsp/1 stick
  4. Garlic Paste: 1 tsp
  5. Capsicum: ½ chopped
  6. Tomato puree: 1 cup
  7. Paneer: 200gms, cut into medium sized cubes
  8. Salt:to taste
  9. Sugar: 1 tsp
  10. Garam masala: 1tsp
  11. Cumin Powder: 1tsp
  12. Milk: 1/4 cup
  13. Kasoori Methi: ½ 4 tsp
Instructions
  1. In a pan add oil, cumin seeds, cinnamon and garlic paste to sauté for 2 mins.
  2. Add the capsicum and saute for 2 minute.
  3. Add tomato puree. Add salt, cumin powder ,garam masala and sugar. Cook till it leaves oil on the sides.
  4. Add milk and mix well and then add paneer cubes. Let it cook for 2 minutes on low flame.
  5. Cook without covering and later add kasoori methi and garnish with coriander leaves and serve.
