Masala Baby Potatoes

He came home early that day and I asked him, “Guess what’s cooking?”

He asked ,”What?”

I said, “Remember, what Sudhanshu cooked for you”

He came running in kitchen and smiled, “Wow, Masala Baby Potatoes”

So Sudhanshu is my dearest hubby’s old friend who use to be his flat mate while they slogged day night in US working of a MNC. Those days Sudhanshu use to cook 'Sukhe Aaloo' which was my hubby’s favorite and after marriage I literally had to learn the same in order to get the way to his heart. It actually took me lot many attempts to cook those perfect masala baby potatoes.

So Masala Baby Potatoes which is better know as ‘Sukhe Aaloo’ has been cooking in my kitchen for 10yrs now and it goes best with some spicy Dal Tadka and Chapati.

Ingredients
  1. Baby potatoes: 250 gm boiled and peeled
  2. Ginger paste: 1 tbsp
  3. Green chilli: 1 chopped
  4. Red chilles: 1 broken
  5. Cumin seeds: 1 tsp
  6. Coriander seeds: 1tsp crushed
  7. Kasuri methi : 1 tsp powdered
  8. Coriander powder: 1 tbsp
  9. Amchur powder: 1 tbsp
  10. Red chilli powder: 1 tsp
  11. Cumin powder: 1 tbsp
  12. Asafoetida: ½ tsp
  13. Garam masala: 1 tsp
  14. Salt: to taste
  15. Mustard oil: 1 tbsp
Instructions
  1. Heat oil in a wok and add asafetida in it and add cumin seeds and crushed coriander seeds.
  2. Now add ginger paste and red chilli and green chilli.
  3. Now add all masalas (coriander powder, red chilli powder, cumin powder , amchur powder) and give it a good mix.
  4. Now add boiled potatoes and salt and mix it till all the masala comes on the potatoes.
  5. Cook it on slow flame till potatoes becomes little crispy and then add kasuri methi and garam masala.
  6. Serve hot with rotis or dal –rice.
