I met Madhumita while I was working for one of the MNCs based out of Noida. Though we belonged to a different team but considering how gregarious she is one can't miss being her friend. Now she belonged to Assam but had been in Delhi for sometime. I also happened to follow her blog http://northeasternbeauty.blogspot.in where she describes some interesting stories.That's when I realized she is a food blogger too and then started my headhuting to get her share recipes with us.Finally we had 'Light Corn Fish Curry'.
So Madhumita is one awesome cook and this you would know with the simplicity of the ingredients but beauty of the final texture.You can imagine if being a vegetarian all my life I can be tempted to describe it the non vegetarians just would relish it. So what are you waiting for..lets quickly try out Madhumita's Light Corn Fish Curry and enjoy it with rice.
- Fish : 500 grams (5/6 pcs)
- Mustard oil : 40 ml approx
- Potato : 2 (large)
- Corn : 50 grams
- Kaljeera : quarter of a table spoon
- Cumin powder : Half tea spoon
- Coriander powder : Half tea spoon
- Green Chilli : 3 / 4
- Tomato puree : 2 tablespoons
- Cream : 2 tablespoon to garnish or to have a taste of creaminess
- Shallow fry the Fish pieces in mustard oil till they get a golden hue and keep them separately.
- Fry the Green Chilies and boil the corn separately.
- Fry the potatos with Kaljeera, put Cumin and Coriander powder, turmeric and salt.
- Now put the boiled corn and mix it well. Put Tomato puree into the mixer and fry for sometime.
- Put Water and blend all well. Once curry comes up well, carefully put the Fish pieces into the mixture.
- Garnish with the fried Green Chilies and cream.
