PANEER!!

I am yet to meet a vegetarian who doesn't love this super creamy , soft and equally yummy dairy avatar. Since my childhood Paneer remains to be my choicest food and till date most of my experiments have been around Paneer. So now that one reason why my first post on this blog has been on Paneer. Trust me with a family of mine where we can eat Paneer for all meals, it wouldn't take me a while to just make this Paneer blog.But then keep the best interest forward I'll try my best to make this as diverse as possible.

However I happen to have a friend who is not just an amazing professional , mom , wife but an awesome cook too. She recently shared one of the recipes she tried and was well appreciated by all those who could get their fingers on it…yes it was finger licking good food. Ingredients
  1. Paneer : 200gms
  2. Cashewnuts: 1 tablespoon
  3. Raisins: 1 tablespoon
  4. Oil to deep fry
  5. Green chutney: 2 tablespoon
  6. Onions and tomatoes: grounded 2 -3 medium
  7. Ginger garlic paste: 2 teaspoons
  8. Tomato puree: ½ cup
  9. Red chilli powder: 1 teaspoon
  10. Coriander powder: 1 ½ teaspoon
  11. Cumin powder:1 ½ teaspoon
  12. White pepper powder: 1 teaspoon
  13. Turmeric powder: ½ teaspoon
  14. Paneer Butter masala: 2 teaspoon
  15. Green chilles finely chopped: 1 teaspoon
  16. Salt to taste
  17. Cream: ½ cup
  18. Cheese for garnish
  19. Green cardamom powder: a pinch
Instructions
  1. Cut the paneer into 4 thin slices and mash the remaining. Finely chop cashwenuts and add to mashed paneer along with raisins. Add green chutney and salt and mix well
  2. Spread the mixture on 2 Paneer slices and cover them with remaining two slices and cut into triangles
  3. Slightly sauté the paneer triangles with butter on both the sides in a nonstick griddle and then takeout the paneer on absorbent paper
  4. To make gravy heat oil in a wok, add cumin seeds and allow it 2 splutter. Then add turmeric powder, one cardamom and add ginger &garlic and cook for a minute ,then add onion and tomato paste. Add the salt and cook.
  5. Add tomato puree and mix well. Sauté for 1-2 minutes. Add red chilli powder, coriander powder, turmeric powder, cumin powder,white pepper powder green chillies and salt and mix well. Sauté for 2 -3 mins
  6. Add paneer butter masala, cream and sauté for 10 mins. If the consistency is thick u can add milk if u want
  7. Take a platter add the gravy and arrange the paneer triangle garnish with cheese and crispy onions fried.
