wheat and jaggery cake

This is Priyanka’s story...

Priyanka my good old friend from college whom we fondly called PihuY2k J So Priyanka’s mom was a great cook and like any other mom she use to stuff her bag with goodies while she came to hostel after vacations. I remember how we would all gather in her room every day post dinner time and enjoy all those delicacies. So one of the things which Priyanka’s mom made was Wheat and Jaggery Cake. Now those days we could not imagine Jaggery as a sugar substitute in cakes however it just tasted to delicious.

So after many years when I met her while we both were by then moms of hyperactive toddlers I asked her about that cake and then she told me how as time moved on and they got busy with lives /career her mom stopped making her famous Wheat and Jaggery Cake as none of her kids where around to enjoy it.But now with Priyanka’s young one, Yohan coming up she again has gotten back to her regular baking. Also Priyanka had no other option than to learn it and bake Wheat and Jaggery Cake by herself for little Yohan and that is how a family recipe was passed on to the next generation. I am sure when Yohan would flaunt about her mom’s baking skill as much as Priyanka did. Being a good friend Priyanka agreed to share this recipe of Wheat and Jaggery Cake with me so lot many more moms can surprise their kids.

Ingredients
  1. Wheat flour - 2 cups
  2. Bura (Fine Jaggery) - 1&1/2 Cup
  3. Eggs - 4
  4. Refine oil - 1 cup
  5. Baking powder -1 tsp
  6. Baking soda - 1/2 tsp
  7. Vanilla essence - 1 tsp
  8. Milk - 1/4 cup (optional)
  9. Raisins - 25 gm (optional)
  10. Little flour and oil for dusting cake tin.
Instructions
  1. Preheat the oven at 180 C.
  2. Dust your cake tin with flour and oil
  3. Shift the flour with baking powder and baking soda twice
  4. Beat eggs,bura,oil together. Add milk if consistancy is thick.
  5. Add flour to above mixture in 2-3 parts. cut and fold the batter nicely.
  6. Add vanilla essence
  7. Dust Raisins in flour and fold it in the batter
  8. Pour the batter in the tin.
  9. Now bake it for 30 -35 minutes at 180 degrees and then do a knife test.
  10. Once knife comes out clean, let it cool for 10 mins and then cut and serve.
