Healthy Pav Bhaji

So the other day I was searching for some random recipse when I came across this interesting way of making Healthy Pav Bhaji via a popular blog named Saffron Trails. Now you heard it right healthy pav bhaji, this means first we would let go potato and may be add sweet potato but wait that’s not it.

Don’t be surprised if I tell you to add soya nuggets too with some dark pink beetroot. I am sure as you read this you are not able to connect the flavor but I hear you for I too felt the same. So to know how this healthy pav bhaji tastes you will have to cook it and go through your litmus test. My litmus test for this healthy pav bhaji was my toddler and his thumbs gave me enough confidence to give it to my husband too. Now this will have a little different taste but then to make it blend as much as you can wash and squeeze boiled nuggets as much as you can.But then since both sweet potato and beet root are sweet, soya granules balances the taste . You might  need to spice it up bit more but the end product is something you would just love.

Ingredients
  1. Beet Root: ½ boiled and grated
  2. Sweet Patoto:1/2 boiled and grates
  3. Onions: 1 chopped
  4. Capsicum: 1 chopped
  5. Tomato: 2 pureed
  6. Soya granules: ½ cup soaked in warm water
  7. Cauliflower: ½ cup boiled
  8. Peas:1/2 cup boiled
  9. Ginger Paste: 1 tbsp
  10. Garlic Paste: 1 tbsp
  11. Garlic : 1 tsp chopped
  12. Chilli: 1 chopped
  13. Cumin powder: 1 tbsp
  14. Pav bhaji masala: 2 tbsp
  15. Chilli powder: ½ tsp
  16. Coriander powder: 1 tsp
  17. Lemon: 1
  18. Coriander: 1 tbsp
  19. Salt: to taste
  20. Oil: 1 tbsp
Instructions
  1. Heat oil in a wok and add chopped garlic and sauté it.
  2. Add onions and once they turn pink mix capsicum and cook it together.
  3. Add salt and then tomato puree and keep cooking it till masala leaves the sides of the wok.
  4. Now add dry masalas like cumin powder, coriander powder, chilly powder and Pav bhaji masala and cook it for 5 minutes
  5. Now mix all boiled vegetable one by one and mix it well.
  6. Add 2 cups water and mix it well and then let it cook on simmer for 10 mins.
  7. At the end add lemon juice and serve it with pav
