Lauki Chikla Sabzi

Lauki Chilka Sabzi is a super easy way to consume whole Lauki. Infact the peels of vegetables are quite nutritious too. However we need to make sure we clean the bottle gourd nicely before using the peel. I generally submerge them into lukewarm salty water. Then after 10 mins rub it nicely and clean the skin.

To make Lauki Chilka Sabzi the peels should be thick enough and hence they need to be cut through knife and not just peeler. This gives more substance to the peel too and when you cook they maintain their shape as well. look at the pics to see how they need to be cut because that is very important part of the recipe. Infact they would look almost similar to the cut potatoes and this tastes great too. Adding potatoes give a nice mix and you can enjoy this with rotis or parathas too.

Ingredients

  • 1 Bottle Gourd
  • 1 Onion slices
  • 2 Potatoes
  • 1 Tomato Sliced
  • 1 tbsp Ginger Paste
  • 1 tbsp Garlic Paste
  • 1 tsp Cumin Seeds
  • 1 tbsp Coriander Powder
  • 1 tsp Turmeric Powder
  • 1 tsp Cumin powder
  • 1 tbsp Lemon Juice
  • 1 tbsp Salt
  • 1 tsp Kitchen King
  • 1 tbsp Oil

Instructions

  1. Clean the bottle gourd nicely with lukewarm salted water and then wipe it dry.

  2. With a knife take out thick peels in thick strips (around 2 -3 cms), which means you also will have some white portion from the bottle gourd apart from the light green peel.

  3. Now cut them into thin slices and keep is aside. Now peel potatoes and cut in thin slices too.

  4. Heat oil and add cumin seeds and sliced onions and caramelize and then add ginger and garlic.

  5. Now add tomatoes and salt, turmeric,cumin powder, coriander powder and cook well.

  6. Gradually add the thin strips or slices of bottlegourd/lauki chilka/peels along with potatoes.

  7. Add salt and cover it and cook till potatoes are done.

  8. Now add some kitchen king masala and mix well and cook for some more time without lid till the peels turn little more brown.

  9. You can add some lemon juice and fresh coriander and serve.
