Babycorn Salad

Babycorn Salad is such a quick fix that you can make this without thinking. We as family love colorful salads and when I had an opportunity to have one, I make the best possible one 🙂

For salads I generally love adding some good fats coming from seeds but not overdoing it for sure. Also we love tossed paneer, so I do love adding them too if the combination allows. Also babycorn itself has quite good texture and you can literally play around with it. Also you can use lemon or apple cider vinegar in this recipe , I however used former and it tasted delightful.

Another important part which I feel about Salads are, they should be uniformly diced or cut. While we use different ingredients but they should fall in more or less similar shape and size . This allows a better appeal and also the dressing gets uniform surface area. Again this is my way of fixing salad , this isn’t some rule book 🙂

Ingredients

  • 6 Babycorns (Steamed)
  • 100 gms Paneer
  • 6 Cherry Tomatoes
  • 1/2 cup Diced Carrot
  • 1/4 cup Diced Onions
  • 1/2 cup Diced Cucumber
  • 1/4 cup Fresh Coriander
  • 1 tbsp Lemon Juice
  • 1 tbsp Extra Virgin Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Chilli Flakes
  • 1/2 tsp Oregano
  • 1/4 tsp Black Pepper
  • 2 cloves Garlic
  • 2 tsp Chopped Coriander Stalks
  • 1 tsp Honey
  • 1 tsp Chia Seeds

Instructions

  1. Dice steamed or boil Baby corns. Cut paneer into small cubes. Steam the carrots a little bit and cut cherry tomatoes in half.

  2. Heat 1/2 tsp oil and add 2 cloves chopped garlic and then add chopped coriander stalks and saute paneer cubes with black pepper and salt and keep aside.

  3. Now make a dressing with lemon juice, 1 tsp olive oil, 1 tsp honey, black pepper, chilli flakes, salt and oregano seasonings.

  4. Now in a bowl add baby corns, cucumber, carrots , paneer , onions and halved cherry tomatoes. Quickly toss in the dressings and mix it well. Adjust the seasonings if needed and add coriander and chia seeds on top and serve fresh.
