Oats & Cranberry Cookies

Oats & Cranberry Cookies were on my mind for months but every time I bought cranberries they got used up on trail mixes or quick snacking. So this time I used them before they again get missing. Ha ha the thing is while we love cranberries , we also love cookies. Hence its really nice to have them both together.

Most of them are made with similar proportions and this works well for our taste too. However if you want you can increase the quality of ghee a little bit as oats tend to give dry texture. But as I said we love it that way, so you can choose the amount of ghee if you want it little more moist. So ya go ahead an make your own Oats & Cranberry Cookies. Also if you want to skip cranberries like my son, you can add some gems on top of it.

Ingredients

  • 1 cup Multigrain Flour
  • 1/4 cup Almonds
  • 1/4 cup Oats
  • 1/4 cup Ghee
  • 1/2 tsp Baking Soda
  • 1/2 tsp Vanilla Essence
  • 1/2 cup Jaggery
  • 1/4 cup Milk
  • 1/8 tsp Salt
  • 20 Cranberries

Instructions

  1. Powder almonds in a mixer grinder and then add oats and powder it together.

  2. Now in a bowl add ghee and jaggery and mix it till everything in uniform and pale brown or creamish in color.

  3. Next sieve multigrain flour (Ragi, Jowar, Bajra and Soya flours mixed) with baking soda and 1/8 tsp salt and keep it aside.

  4. Now gradually mix the flour in the ghee and jaggery mixture and then the almond mixture.

  5. Gradually add little milk and with hand bring all the dough together.

  6. Put the oven on pre heat mode at 180 degrees for 10 mins .

  7. Make small ball and flatten then a bit and then add some dried berries and arrange cookies with some distance in between.

  8. Bake this for 15 mins at 180 degrees and then let it sit in the oven for 10 mins and then let it cool down as it becomes crisp.

  9. Store this in airtight container and enjoy.
