Banana Walnut Bread

Banana Walnut Bread is finally up on the blog after so long. This post has been long due and finally I am glad its up and running. Sometimes I wonder what is more difficult creating a dish or sharing the recipe. ha ha

Well I love both of the them but yes, the latter one sometimes is always my pending itmes. So I learnt the original version of this Banana Walnut Bread from my Mother In Law .However over the time have made changes as they happened and as I learnt more healthy cooking.

infact I love creating these without any sweetners . But then I feel kids would need a little sweet so sharing the version with a little healthy sweetner. This recipe has goodness of wholewheat instead of refined, used cold pressed oil instead of butter and offcourse the white sugar is no where to be seen.

This Banana Walnut Bread is extremely easy to make and you would just love making it. Trust me most cakes are similar expect for a little here and there and once you get a hang of things, all you need to do is innovate.

Ingredients

  • 1 cup Wholewheat Flour
  • 1/2 cup Curd
  • 1/2 cup Cold Pressed Oil
  • 1 Banana
  • 1/2 cup Palm Sugar
  • 1/4 cup Walnuts (chopped)
  • 1 tsp Vanilla Essence
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 4 tbsp Milk (if needed)

Instructions

  1. Sieve Wholewheat flour, baking powder, soda and salt all together 4 times atleast.

  2. Now mash banana , vanilla essence and add oil and curd and mix well.

  3. Make powder of palm sugar and add in the banana and curd mixture.

  4. At this point put the oven on preheat at 180 degrees.

  5. Now gradually say 3 tbsp at a time mix flour in the banana and curd wet mixture and fold it gradually mixing all of the flour.

  6. If it becomes difficult to folk add couple of tbsp of milk and then add chopped walnuts. Do not over mix it,

  7. Grease a pan, here I took a loaf pan and then add the batter and lightly tap it. Sprinkle some chopped walnuts too.

  8. Add in over and bake at 180 degrees for 35 mins and then so a knife test. If the knife comes out clean the cake is done otherwise bake for another 5 mins.

  9. Let the cake sit in oven for 10 mins and then take it out to cool down and serve.
